I got a little drunk last night so I felt a little bit hung over this morning. Okey, I’m lying, I got really drunk last night and this morning I felt like I got hit by a train. So, naturally I ended up in the kitchen for over an hour to cook up my 2 posts of today… Yes, I’m an idiot 😛

First up is my recipe for a tomato paste, for this paste I used a recipe from one of my favourite cookbooks: Vegetarian by Alice Hart. This book features 141 awesome recipes which are easy to make and look and taste amazing. I’ve adapted it a little, to make it a bit cheaper and less spicy.

What do you need?

  • 4 chillies (or more, depending on the size)
  • 300 gr. of cherry tomatoes
  • 2 tablespoons of brown sugar
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of soy sauce (less salt)

Cut up your tomatoes and chillies, I would recommend using a foodprocessor for chopping your chillies, but I don’t have one so that takes up a lot of time. Yes, I use gloves when cutting chillies, I like being able to use my hands later without burning something.

Heat up a nonstick pan and place your chillies, tomatoes and sugar in your pan. Leave to boil for about 15 minutes until your tomatoes are nice and soft. Add your rice vinegar and soy sauce and leave it to boil again until it’s a nice thick paste. While this is cooking sterilise a jar so you can store your pasta in de fridge. Recipe says you could store it up to a month like this, but mine never lasts that long, because I use it on pretty much everything (except something sweet maybe)

When you poured the paste in your jar, screw up the lit and turn it around on the lit so cool. After that, place in the fridge until you want to use it.
