This post was supposed to involve a brand new Lazy Monday-recipe involving my oven. Except, my oven blew up this morning while I was cooking (late shift, so I have dinner for lunch). So this post almost didn’t happen. But, I have a back-up!

Last Friday I made Burrito bowls, which is basically wraps filled with a filling you could make to fill a rolled up Burrito or a Taco. But I made to much filling so my wrap didn’t want to roll up properly, so that’s why it turned into a bowl. They only take about 10 minutes to bake, you if you make the bean/corn-mixture earlier this is the perfect meal to make at halftime when watching a game of soccer.

Because I didn’t plan to post this recipe at first I only have the picture I put on Instagram. Hopefully my new oven will arrive soon and will next weeks post be a proper recipe with enough pictures.

What do you need? (2 wraps)

  • Wrap
  • Lettuce
  • Tomatoes
  • Black beans (400 gr. can)
  • Corn
  • 1 Sweet paprika
  • Can of concentrated tomato paste
  • Cheese
  • Creme Fraiche
  • Spices:
    • chilli flakes
    • garlic
    • oregano
    • paprika
    • salt
    • pepper

Drain your black beans and corn and heat some oil in a pan. Mix your spices with about 3 tablespoons of concentrated tomato paste. Bake your beans and corn in a ban and add the tomato paste mixture. Leave to warm up a bit while you heat your oven to a 175 degrees Celsius en prep your ‘bowl’. Take a oven dish and place your wrap in the dish. If you make more then one you can make bowls by using a bowl and place them all together like little bowls.










Fill up your wrap with the bean/corn-mixture and sprinkle some cheese on top and slices of tomato on top. Place it in the oven and bake until your cheese has melted.

While your bowl’s a baking cut up your lettuce and give your creme fraiche a little whip so it’s a bit fluffy and not so solid on your plate. When your bowls are done, add your lettuce and a tablespoon or 2 of creme fraiche and serve.
