Savoury pancakes, I never was a big fan, pancakes should be sweet and sugary! But since I don’t eat that much sugary foods anymore I don’t crave sweet pancakes as much as I used to, and I’ve started to enjoy the savoury kind.

Today I was craving pancakes and when I was gathering my ingredients I saw some greek cheese and a tomato in my fridge and so my ‘Greek-style’ pancake was born. I added some water to my batter since I thought it was kinda thick, but if you like smaller pancakes you can leave the water out.

You could also add some unions or maybe even some olives, but I liked the tomato/cheese flavour enough.

  • 1/3 cup of wholewheat flour
  • 1/3 cup of milk (I used soy)
  • 2 tablespoons  of water
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1 tomato
  • 35 gr. feta cheese
  • oregano

In a bowl, mix the flour, milk, baking powder/soda and the oregano together to a nice and smooth batter. Cut your tomato in slices and the feta cheese is strips and cubes. Heat up a little bit of butter (yes, butter, no oil!) in a frying pan and pour in your batter.greekpancakes3

When the edges start to brown and little bubbles appear on top add the slices of tomato and the bits of feta cheese. Don’t flip your pancake (unless you want cheese all over you pan) but place a lid on top of your pancake to the top of the pancake will bake as well.
