So, I sort a had a date last Friday. And since he was going to make me dinner and promised to bake something. Since we both LOVE The Walking Dead I decided on making the cookies Carol made in the last season. I will not get into the episode to much, I might spoil it for the people who haven’t seen the episode yet. But this episode made Carol one of my favourite characters on the show (next to Daryl and Glenn). For those who can’t get enough of that scene, watch it here (spoilers!!)

I did lower the amount of sugar (by a bit) and went for 90 gr., but I made about 18 cookies, so it’s not that bad. And I don’t want to look like to much of a health freak on my first date, I was already so happy he made an effort of making me a vegetarian meal. I also used butter instead of shorting, because I can’t get that here.

I’ve also never made cookies with applesauce before, but they where so fluffy and big when they came out of the oven. I will make them again šŸ˜€

What do you need (18 cookies)carrolscookie1

  • 1/4 cup of low sugar applesauce
  • chocolate (I used about 30 gr. 72% cacao)
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • salt
  • 1/4 cup of vegan butter (melted)
  • 90 gr. of sugar
  • 1 cup of flour
  • vanilla

Mix the melted butter, applesauce and sugar together until smooth, then add the baking powder/soda/salt and vanilla and mix again. It should look something like this.

Sieve your flower and add it slowly, not everything at once. Fold it in until everything is mixed.

Chop your chocolate into small bits and add them to the dough. Wrap up your dough in cling film and put it in the refrigerator for about 30 minutes until it’s firm. Heat your oven at 180 degrees Celsius (350 fahrenheit). Make about 18 little balls of dough and place them on baking paper. Bake for about 13 minutes until they are nice and brown.
