For this weeks Lazy Monday I gave a twist to a ‘meat’-recipe once again: meatballs in tomato sauce. You can mix in different kinds of veggies and carbs. But I choose couscous and green beans. Frozen beans might work best, since you can just add them to the sauce and leave to simmer until done, but I used fresh ones.

I used the same kind of meat replacement as I used in the gymclassic, since I bought 2 packs of those. But if you want a meat option, I would go for a low fat option like Turkey or Chicken meat. The tomato sauce is just a plain can of tomatoes with some added spices, so again, really easy to make.

Using couscous instead of rice makes it a lot faster to make, but don’t make the mistake I made the first time I made this and try to mix it with the sauce. The couscous sucks up a lot of the sauce, so I next time I would serve it separately. You want to keep the red of the sauce on your plate, combined with the green of the beans it looks like a little party on your plate 😀

What do you need? (2 servings)meatballs1

  • Green beans (frozen of fresh)
  • ‘Meat’-balls
  • Couscous (I used 65 gr. a serving)
  • Can of tomatoes
  • Mustard
  • Pepper
  • Garlic
  • Red pepperflakes/fresh chilli
  • Paprika-powder

If you’re using fresh beans, cook them for about 5 minutes. In a bowl, mix the tomatoes, mustard, pepper, garlic, pepper flakes/fresh chilli and paprika powder.

Pour the sauce, 1/2 cup of water and the ‘meatballs’ in a heated wok and let the tomato sauce reduce a bit. If you’re using frozen beans, add them as well and let them cook in the sauce. If you’re using fresh beans, add them the last minute and cover them with the sauce.

Boil some water and add that to the couscous. Put everything on a plate and enjoy your meal! By NOT mixing the couscous in the sauce before serving, to
