Chilli = comfort food. I mean, you put all your food in a big bowl, grab a spoon and dig in while being curled up on the sofa with your favourite tv-show on the tellie… Sounds great right… When I found this version with black beans on Pinterest I knew I had to share this one with you guys.

It’s super simple and it get’s even better when you eat it the next day (as is the thing with a lot of foods like this. If you want, you can always add a little spoonful of sour cream or (homemade) tortilla chips to the meal, that way you can make more servings. Serve with a nice salade with some iceberg, left over corn and tomato.

  • 2 can of tomatoes
  • 1 large can of black beans
  • 2 large sweet potato
  • 1 red paprika
  • 1 large can of corn
  • 1 onion
  • 1 avocado
  • 2 cups of vegetable broth
  • Peper
  • chipotle paste
Cut the sweet potato, paprika and onion in chunks. Heat a little oil in a deep frying pan and bake the potato, paprika and union for about 5-7 minutes.
Add the tomatoes, beans, corn, broth, pepper and chipotle paste. Stir until combined, bring to a boil and let it cook for about 20 minutes on a medium heat until the sweet potato has become soft.
When the chilli is almost done, slice your avocado in slices and serve the avocado on top of the chilli.
