Okey, this may not sound as healthy as it is.. I mean: FRIED rice… But, this is all veggies!! So it’s super healthy and low carb (if you’re into that 😉 ) and it’s super easy to make. Unless you’re me, then you have to clean your kitchen after cooking this.

This ‘rice’ is made out of cauliflower!! It’s basically a bowl filled with veggies, some tofu en an egg….. You can eat an enormous amount and not eat the huge amount of calories a normal friend rice would give you.

What do you need? (2 servings) cauliflowerrice1

  • 700 grams of cauliflower
  • 2 eggs
  • 4 spring unions cut in little pieces.
  • 1 cup of pea’s (can/frozen/fresh)
  • 200 gr. of tofu
  • 2 tablespoon of hoisin sauce
  • 2 tablespoon of soy sauce
  • sesame seeds
  • chilli flakes
  • oil for baking

First, start marinating your tofu, because it needs to sit for a while. Cut the tofu in 1x1cm pieces and mix with the hoisin sauce, soy sauce and sesame seeds. Put in the freezer until you’re ready to bake it.

Now it’s time to start grating your cauliflower. You can do this in a kitchen machine, I would actually recommend it 😛 Otherwise you’re kitchen will look like this:


When all your ‘rice’ is done, wrap it in a clean tea towel and give it a very good squeeze to take out as much moist as you can, it will make your ‘rice’ crisper when you bake it later.

Heat up a wok and add some oil of choice, I used coconut because it gives this meal a better taste then olive oil would. Take out your tofu and bake the tofu WITHOUT the rest of the marinade until it starts to get crispy bits around the edges, take it out and set aside for a bit. You need the marinade later…

Now it’s time to ‘fry’ the rice. If your pan is still oily enough don’t add any more oil, otherwise start by heating some oil again. Add the rice and start baking it like you would a stir fry. When the  ‘rice’ starts get get firmer, add the spring union and chilli flakes.



Look at the pretty colours!!! Looks tasty right! When they unions have had their time to bake a little, add the eggs. Now you have to keep stirring until the ‘rice’ is covered by the eggs, otherwise it will turn into and omelet and you don’t want that!!!


After that, add the tofu and the pea’s. The first time I made this I didn’t bake the tofu first, please don’t do that, otherwise it will stay soft. Because this meal has nothing ‘crispy’ of it’s own, like it would when you would use normal rice, the tofu needs to be firmer… This is also the moment to add the rest of the marinade. I wanted something extra, so I had some ‘cassava chips’ with it. Gives it a bite I guess 😛
