Pancakes for breakfast, the ultimate comfort food and best weekend starter ever!! Last week I had two impuls idea’s when I woke up: I wanted pancakes and I wanted to paint my living room (really, ADHD can be such a wonderful thing :P). So after breakfast my living room looked like this:

But I don’t think your interested in what happend to my living room, but you’re more interested in my recipe for the apple pancakes. It’s not my own, but hey ‘better steal something good, then make up something bad’. I’ve been reading about this recipe on a few blogs and it looks easy, it’s a pancake but because it’s more of a disk of fruit with batter it’s healthier then an actual pancake (or so I tell myself). A lot of people use egg in the batter, but I actually stopped doing that a long time ago. I just like it better like this.

What do you need (1 serving)applepancake1

  • 40 gr. of flour (I used spelt)
  • 120 ml. of milk (I used soy)
  • cinnamon
  • 1 apple
  • 1/2 banana
  • barley malt syrup for serving or any other kind of syrup.
  • vegan butter for baking

Peel your apple and remove the inside and cut it into thick slices. applepancake2
Mix the flour, cinnamon and the milk until it’s a nice smooth batter. Drop the slices of apple in the batter and make sure they get covered really well.

In a pan, heat some butter and carefully slide the batter-covered-apples in the pan. Using a spoon, fill up the hole in the apple with some more batter and cover the apple a bit mor with batter. It’s needs the turn into a sort of pancake ‘crust’. Cover with a lid until the whole thing has set and then flip your pancake and bake until it starts to brown. The ones on the picture are the last ones I made, so there was extra batter.

When your pancakes are done it’s time to start building your stack of pancake-tastyness. Start by slicing the banana. Stack all your pancakes on a plate and top of with some slices of banana and a drizzle of syrup. I used barley malt because I bought a jar for my reenactment experiment and this is the ULTIMATE sugar syrup. It’s super super sweet, really you only need about a teaspoon for this, otherwise your enamel on your teeth fill fall of (believe me, I’ve tried).
