Pfff…. I survived my first ‘real’ day of work. Although I started yesterday, that was very relaxed day. Since I didn’t have my laptop yet I couldn’t do much in the morning, so I spend the morning reading. In the afternoon I had to pick up my laptop at HQ and I took part in an introduction, which was boring stuff about retirement and stuff like that.

So today was my first real day of work and my head is just spinning right now, I got so much information that I feel like some took a opened up my head and stuffed my head until it couldn’t really close anymore… So you understand I was very glad I made a big slowcooker filled with pasta sauce (recipe will be up later this week) and that I made a double portion yesterday. I only had to cook the Gnocchi and poor the sauce over and let it warm up a bit.

  • 1 bag (400 gr) of pre-cut vegetables.
  • 1 can of tomatoes
  • few mushrooms
  • 1 packet of Gnocchi
  • pepper/salt/oregano
  • Fresh basil
  • optional: veggie burger/chicken


Gnocchi are dough dumplings that can be made from wheat/potato/semolina. In Italy they are usually served as a first course as an alternative to soup or pasta. I always forget that pasta is served as a starter in Italy, since we normally eat it as a main dish. I never had them before, but it’s always something to try. I have some left and although I like them cooked, I might bake them, just to try 😛


Start by baking the pre-cut veggies in a little bit of oil and start boiling the water for the gnocchi. While this is cooking/baking cut the mushrooms and set them aside. When the veggies are baked add the tomatoes and the spices. Cook the gnocchi according to the directions (mine needed 3 minutes). Add the mushrooms to the sauce and heat them for a few minutes. In a separate pan, bake the protein (I used a pre-made veggie burger).

When the gnocchi is cooked, drain them and let the rest of the water evaporate a little. I did that by putting the pan back on a very low heat. Pour the veggies on a plate, cut your source of protein into pieces and mix that in the sauce.



Finish your dinner by adding the gnocchi to the veggies and sprinkle some fresh basil of the whole meal 😀
