Remember that awesome app I was telling you guys about a few weeks ago? This recipe was inspired by one of the recipes I found on that app. I’m lucky I always plan on eating the same meal once or twice before I post it here, because the first time wasn’t really a great succes. The dressing was kinda bland and I kinda missed a crunch in the whole meal. So I made some sort of spicy peanut sauce/dressing…
I put in quite a bit of Sriracha, but you can just add less if you’re not into really spicy dressing, or even replace it with a different kind of hot sauce…
- 400 gr. of broccoli, cut into small rosettes
- 110 gr. of red lentils
- 100 gr. of tempeh
- 2 teaspoons of peanut butter (I used crunchy)
- 2 teaspoons of soy sauce (reduced salt)
- 2 teaspoons of Sriracha
- up to 2 teaspoon of oil (to taste)
- garlic powder
Start by cooking the lentils according to the directions on the package, mine where done after 15 minutes. Cook the broccoli for about 4-5 minutes, because you cut it into small pieces they don’t need to cook that long. While those are cooking, cut your tempeh into small strips, you can marinade them in some spices if you want (garlic, soy sauce). I didn’t, because for some reason I’m beginning to like the taste of tempeh… I’m an idiot like that 😛
Heat a little bit of oil in a frying pan and bake the tempeh until it starts to brown and gets a little crispy on the edges. Keep that separate until you are ready to build the salade.
When the lentils and broccoli are cooked, drain them and put them together in a pan to rest for a bit and cool down a bit. You’re not going to eat this salad very warm, otherwise it’s just to much.
While the tempeh, lentils and broccoli are cooling down a bit, it’s time to make your dressing. Mix all the peanut butter, soy sauce, Sriracha and spices together. If you like it a bit runny you can add some olive oil. I ended up using about 3/4 a teaspoon.
Now it’s time to build your salade. Put the lentils and the broccoli in a pretty bowl and add the tempeh. You can serve the dressing on the side and drizzle it to taste. I just added everything because I’m alone anyways 😛
And this is how it all looks together. You can see I used crunchy peanut butter because of the little peanut bits in the sauce, I felt it added a little crunch to the salad.
