Today shall be called Cheat day!!


Actually it’s because I had a bit to much to drink yesterday and I always crave salty foods the day after. So I have a bag of garlic chips waiting for me to indulge on later tonight. I have to find a horrible movie to go with that, but first dinner!

I didn’t want to make a big fuss out of dinner but I didn’t want to overdo the whole cheat day. Then I remembered I had some Gnocchi left in the freezer and I still had a recipe for a vegan ‘cheese sauce’ I wanted to make. I wanted to make it with macaroni first, but this actually took less time to make because the gnocchi only needs 2 minutes to cook instead of the 8 my normal pasta does.

What do you need (1 serving) gnocchiandcheese1

  • 170 gr. of Gnocchi
  • 80 ml of plant based milk (I used almond)
  • 15 gr. of nutritional yeast flakes
  • 8 gr. of spelt flour
  • 5 gr. of mustard
  • garlic

And to make it at least a bit healthy

  • 2 Tomatoes
  • Red onion
  • Lettuce

Cook the gnocchi according to the direction on the package. While these are cooking measure out all the ingredients for the sauce. When they are done cooking. Put a saucepan on medium heat and combine all the ingredients. Stir the sauce for a few minutes until it becomes thick. Make sure the flour leaves no lumps in the sauce.


Add the onion, cooked gnocchi and stir until everything is covered in the tasty ‘cheese sauce’. Add some chunks tomatoes if you want and serve with the rest of the tomatoes and the lettuce.
