Okey, I’m being cheesy by calling this muffin like this, because it’s horrible to make 2 muffins without being weird on ingredients. But there are two reasons why I tried on making 2 muffins:
- I didn’t want to get the mixing bowl and mixer, I only wanted to use two bowls
- I didn’t want to make to many and freeze them, my freezer is full enough as it is.
The ingredients listed here are for 8 though, because I don’t expect people to be like me, plus… they are so good!!! I got the caramel for free with my grocery’s, so that’s why I had it around because I really never buy that stuff. I actually did put the rest of that in the freezer because I might make them more often or when I have people over.
- 150 gr. of spelt flour
- 2 teaspoons of baking powder
- dash of baking soda
- dash of salt
- 1 tablespoon of oil
- 1 banana
- 70 gr. of yogurt
- 50 gr. of toffee bits
- 2 tablespoons of water
If you do use eggs, reduce the baking soda to a dash and leave out the water, but otherwise they don’t puff up and you end up with really sweet bricks 😛
Mix the wet ingredients in one bowl and the dry ones in the other. Make sure you really mix the baking powder in, otherwise you might get a funny taste. If you don’t mind eggs, just use one egg 😀
Mix the two together by adding a bit of the dry ingredients to the wet ones and use a fork to mix them up.
Spoon the mix in a paper lined muffin tray. First a layer of batter, then some of the toffee bits and then cover that with the rest.
After that, bake for about 15 minutes in a 180 degrees Celsius oven. Enjoy with a nice cup of coffee or tea and snuggle up to your lover..
