As a wrote earlier this week, I took this week off because the last few weeks took a lot of energy from me. I’ve been dealing with migraines for over 3 weeks and I just didn’t feel ‘right’. So this week I’ll just kick back, relax and binge watch all the shows I’ve mist over the last few weeks. This also gives me time to catch up on writing blogposts.

This salad gives me this real autumn feeling, which I’ve been having for the last few weeks. As always, winters in the Netherlands suck. You want the above picture, you get the one below. How depressing is that!

What do you need (2 salads, or 4 starters)redbeetsalad1

  • 2 sweet potatoes
  • 4 raw red beets
  • lettuce
  • Walnuts
  • Dressing
    • 10 gr. of tahin
    • lemon juice
    • water
    • pepper/salt and other spices of choice

Preheat the oven at about 200 degrees Celsius. Cut the beets and potatoes into cubes and bake them in the oven for about 20-25 minutes.redbeetsalad2

While those are baking, mix together the ingredients for the dressing, roughly chop up the walnuts and was the lettuce. Put the lettuce on a plate, top with potatoes and beets and finish of with the dressing and walnuts
