Today was one of those days, where people can’t seem to shove things your way and expect you to handle it. Guess what, take care of your own mess!
After that I had to wait over 20 minutes before I got my groceries for the weekend and then I was finally home around 18:15 (I left work at 16:15). So now I have a put loads of stuff in the car, clean up the house, do dishes. So, I bought a bag of vegetable crisps and a can of Fanta. Everybody that tries to contact me, you’ll be on ignore until tommorow, people = shit is my mood today

On the fun side, a friend sent me a picture that was taken when I was a little girl. I’ve cut out myself since I don’t know if my mom wants to be online (although she looks amazing on that picture)

Back to food, this is a recipe I actually intent to use in the book. But I wanted to share it with you guys.

What do you need (1 huge pan)Vegetablestew1

  • 500 gr. of carrots
  • 200 gr. of green beens
  • 1 large paprika
  • 2 large onions
  • 400 gr. of potatoes
  • 1 large can of chickpea’s
  • dried fruit (figs, apricots, plums)
  • 1/2 cup of water
  • cumin
  • koriander
  • pepper
  • salt

Ok, this dish might take a while to prepare, but after that it’s just putting everything in the slow cooker and waiting until everything is done. So start by cutting everything in nice chunks while the slow cooker is getting warm.

When the slow cooker is up to temperature, add all the veggies, spices and water and put the lid on. After about 2 hours add the chickpeas (they don’t need that long).

I bought a bag of mixed dry fruits, but you can just take any kind you like.

After about 5 hours in the slow cooker, the stew was done. I made so much I could eat 3-4 days from that big pot. It’s loaded with veggies so super healthy!! I stored the rest in airtight containers and I think that even improved the flavour (although it didn’t do much for the look of the meal)
