I love coconut!!! My favourite shower gel is smells like coconut and I love some coconut in my muffins. I just love coconut, so because I love coconut so much I’m gonna spam you with some coconut songs, because I’m sure I’m not the only one who loved coconut.
Sorry, I’ll be ‘normal’ again (well, my version that it). Since the weather sucks I’m just bringing the summer to my life myself. Really, I’m writing this around 8:00 in the morning and I’m wearing a sweater, I have the heating on 19,5 degrees Celsius and it’s raining outside. It’s almost May people!!
So, how to bring the summer to your life. That’s right, by making a coconut breakfast. I was watching “Guardians of the Galaxy” yesterday and this song inspired my on this breakfast. Without the alcohol of course, but with coconut milk and yogurt!!

What do you need? (1 serving)pinacolada1
  • 45 gr. oatmeal
  • 200 ml of coconut milk
  • 65 ml of coconut yogurt
  • 100 gr. of pineapple
  • coconut flakes (optional)


Put the oatmeal and coconut milk in a saucepan and let it simmer until the oatmeal is to taste. The coconut drink I used wasn’t the same consistency as my normal almond milk, so I had to keep my eye on it.


I used a pineapple salad, which had pre-cut pieces of pineapple. I wouldn’t go for pineapple from a can because that often has added sugars which you don’t want in this breakfast. Overpowers the flavour of the coconut. I did cut the chunks a little smaller because I thought they where to big for breakfast.


When the oatmeal is done, pour into a bowl, spoon some yogurt on top and add the pineapple. If you like, add some shredded coconut. If you don’t think it’s sweet enough add a little bit of agave or any other natural sweetener.
