This weekend I was feeling like Mexican food, but since my body wasn’t agreeing with a lot of walking and cooking I went for the easy option and bought pre-made wraps and sauce. Downside: one packet of wraps contains about 8 wraps and I usually eat one during dinner. So I some leftovers.

So instead of making a sandwich for lunch I made something that has been on my list for a while now, a Tortizza. Which is basically a pizza made out of tortilla wrap. You can put pretty much everything on it so I used some leftovers from last night:

  • corn
  • smoked paprika
  • vegan cheese

I added some rocket salad as well, but you can use any kind of veggies you like.

What do you need (1 serving)torpizza1

  • 1 tortilla wrap (I used wholegrain)
  • 1 slice of vegan cheese
  • 40 gr. of salsa
  • veggies of choice,

Pre-heat the oven to 200 degrees Celsius while you prepare you Torpizza. Spread the salsa on the wrap. Add your veggies and put on the cheese. Put that in the oven for about 10 minutes.

Since I like my rocket salad when it’s warm I cut up some of the salad while I was waiting. After about 10 minutes, I took out the wrap and put on the rocket on top, leaving a little bit of to add later.

But instead of putting it back in the oven, I turned on the grill to add some color to  the cheese and the wrap. That took about 3 minutes, long enough to make that much needed cup of coffee. Take out the Tortizza and enjoy that lazy sunday.
