After being at home for a week with a heavy migraine I started work again. Not that I was feeling 100% again, but staying at home drove my absolutely crazy. So today I just went to work, being tired about half way through. But hey… only 14 more days until I have 11 days of again and after that I can start my new job.

I made this ‘chicken’ a few weeks ago, but I didn’t have the energy to write the recipe before. Fun meal for a sunny Saturday in September :S Has anyone told autumn that he should show his face by now?

What do you need? (1 serving)

  • mock chicken (I used about 80 grams)
  • 2 tomatoes
  • 1/2 red onion
  • 1/2 red pepper
  • 1 glove of garlic
  • 2,5 ml of agave syrup
  • 1 tablespoon of less salt soysauce
  • 1 tablespoon of Hoisin Sauce
  • 1/4 teaspoon mustard
  • polenta
  • milk/water
  • pepper/salt

Preheat the oven at 180 degrees celcius. In a bowl, mix the Hoisin, Soy, Agave , mustard, garlic together. Put the chicken in a ovenproof dish. Cut the onion, pepper and tomatoes into large chucks and put that on top of the chicken. Put that in the oven for about 30 minutes until the veggies are soft and the chicken has become nice warm and sticky.

While that is cooking in the oven, put the polenta and the water/milk in a pan and leave to simmer on low heat. Depending on the directions on the package, you might have to add more water/milk. Add pepper/salt to taste. I even added some thyme for an extra spice taste.

Put the polenta on a nice plate and spoon the chicken and veggies on top.
