Today was a busy day! I spend the day at the indoor playground with the son of some of my close friends. So easy, just take of the boys shoes and… ‘release’! He was really enjoying hisself and I did some reading for new Viking outfits that are more suitable for the time-period and place I want to focus on. Most of the ‘male’-stuff I have can be altered and that’s most important.
Tonight will be spend packing my suitcase since the mr. and me are going away for a few days. Can’t wait. So tonight I made something quick and easy  but this was also a very quick and easy meal, which could be done using only frozen veggies if you want 😀

This was actually something that I wanted to make with rice, but since I cleaned out the fridge earlier I ran into the roti pancakes I bought the week before when I made vegan roti (that recipe is coming up as well, I’m really behind on my writing 😛
So you could do this with rice as well, maybe that will work even better 😛
What do you need (2 servings)tahinchickpea4
  • 2 roti pancakes/rice
  • broccoli
  • 1 can of carrots
  • 1 red pepper
  • 1 onion
  •  Sauce
    • 2 tablespoons of tahin
    • 2 tablespoon of lemon juice
    • 60 ml of water
    • garlic/salt/pepper
  • Chickpea’s
    • 1 can of chickpea’s
    • garlic
    • cumin
    • paprika
    • salt
Cut the broccoli into rosets and steam that together with the carrots for about 6 minutes. Mix the ingredients for the chickpea’s together with the spices and set a side until you are ready to start cooking. Slice the pepper and onions into rings.
Mix the ingredients for the sauce and set a side.
In a wok, heat some oil and fry the onion until soft. Add the pepper and chickpea’s and bake until the chickpea’s are starting to brown up a bit. Add the broccoli and the carrots. Look at the pretty colours!!!

Bake the roti according to the directions on the package or cook one serving of rice a person. Put the roti on a plate or the rice in a bowl. Spoon the veggies/chickpea’s on top and spoon on the
