So, last week before my new job starts and our second day of vacation together. Yesterday was spend doing something the Mr. was dreading, we would clean out some of the boxes that he stores in his house containing various stuff, some of which hold items that belonged to his parents. Today we mainly focussed on the stuff that had the least emotional connection for him. Mainly glasses and stuff like that.
To make up for the fact that I ‘forced’ him to get rid of his beloved hexagon-shaped dishes (really, they are ugly) I made him some comfort food, this Caribbean Kale-mash. And in the evening I made him a ‘little’ mug cake (3 tablespoons of peanut butter, self-raising flour and milk, 1 tablespoon of sugar, heat 90 seconds in the microwave)
What do you need (2 servings)
- 400 gr. of potatoes
- 400 gr. of kale
- 150 ml. of coconut milk
- 200 gr. of mango, cut into chunks
- “Caribbean Spices” (Paprika, garlic, onion, salt, parsley, fennel)
- vegan option: vegan ‘meatballs’
- non-vegan option: beef sausage
Peel the potatoes and cut them into 2×2 cm pieces. Put these together with the kale in a pan, add water and bring to a boil. When the water starts to boil, turn down the heat and let them simmer until the potatoes are soft enough so they fall apart when you poke them with a fork.
While that is cooking, prepare the sausage (or, in my case, I let the Mr. do it) and the vegan meatballs.
Mash your potatoes and add the coconut milk to taste. I only used 130 ml., since we both like a chunky mash. When the mash is mixed enough, add the mango and the spices. Mix well.
Serve with the sausage, of course: eat on the sofa!
