Yay, first week at the new job is over!! It’s totally different from what I’m used to, but thankfully I know the basic things like registering an incident and working with the system that we use to register. So that means I can really focus on learning the skills that I need and to develop the skills to get to the point where I want to be.

This chili was something I was looking forward to all week, because it’s comforting and cozy, just what you need after a long week of new impressions. This weekend will be fun as well, since we’re going out to dinner to my favourite restaurant. Sunday will be cuddles and relaxing with the Mr.


What do you need (2 servings)

  • 400 gr. of pumpkin, cut into chunks
  • 140 gr. of kidney beans
  • 140 gr. of black beans
  • red onion
  • 1 can of tomatoes
  • cumin/koriander/paprika powder/pepper/oregano/salt
  • 1 large clove of garlic
  • some jalapeño

Cut the onion, garlic and jalapeño in rings and drain the beans and rinse them. Heat some oil in the pan and fry the onion, garlic and jalapeño. Add the beans after a minute or 2 and fry for another minute or two. After that, add the pumpkin, tomatoes and the spices (to taste). Cover and cook on low heat until the pumpkin is getting soft.

While that is cooking prepare something like rice, potatoes or couscous, depending on what you feel like. I made this with rice and couscous, but I think quinoa would work as well. Perfect for freezing I’d say 😛
