I love it when I can make dinner for multible people. Not only because eating with multible people is fun, this also gives my the opertunity to use loads of diffrent veggies in one meal. And of course, my Mr. is a very trusty test-subject. He’s willing to try anything and shares my love for hot and spicy food.
This is also a meal which is easy a adapt for meateaters, since I just made the curry and meat seperate. I used mock chicken from the Asian supermarkted, but you could also use chickpea’s or any kind of meat replacement of choice.
What do you need (2 servings)
  • Green curry paste (I used about 40 grams)
  • 1 cup of coconut milk
  • 1 cup of water
  • 250 gr. Broccoli
  • 1 red bell pepper
  • 200 gr. of green beans
  • 1 yellow onion
  • rice
  • 1 clove of garlic
  • Sriracha

Cook rice according to the directions on the package. Cut the onion into chunks, the green beens into 2,3-3 cm long pieces, the pepper into 1x1cm pieces and the broccoli into rosets. When I was cooking this I just sat in front of the tv while I was watching Westworld (awesome serie btw).

When you are ready to start cooking, heat up some oil in a wok and start with the garlic and the onion. Add the rest of the veggies and fry for about 3 minutes on high heat. While that is frying up, mix the coconut milk, water and curry paste together and add that to the veggies. Turn down the heat and leave to simmer until all the veggies are done.

I bought a can of mock chicken a while ago which I made for ‘protein’ with this meal, the Mr. made chicken. I bought mock chicken a while ago, but that one actually tasted a lot better then this one. This one had the structure of meat (according to the Mr., but not the flavour.

Put the curry and the chicken on a plate and add some rise. Drizzle over a little bit (or a lot) of Sriacha and enjoy!
