Sometimes, you cook up a thing that you think will be great at first, but for some reason don’t turn out this great. This happens to me about once a month, either it’s a baking experiment gone wrong or a meal that just soundsed better in my head, but the image in my head just doesn’t translate that well to the plate.
This is not my best work. It was good, but not great. I know the reasons: I should have drained the veggies better before putting them in the oven and I should have added the tomatoes at a later time. Also, this works better if you have a larger flat baking tray, so I’m hoping for a decent sized oven in our new home.
What do you need (2 servings)
- 4 tomatoes
- 1 small can of red kidney beans (140 gr.)
- 1 small can of black beans (140 gr.)
- 500 gr. of ‘vegetable fries’ *
- 1 tablespoon of oil
- Spices for vegetable fries: chili powder,cumin, onion powder, paprika, black pepper, oregano, red pepper
- 80 gr. of plant based yogurt
- 2 cloves of garlic (or to taste)
- Lemon juice
- Corn tortilla’s
- Feta cheese
- Hot sauce
Start by making your yogurt sauce, mix the plant based yogurt with the garlic, dill and parsley. Mix well and set a side. We like garlic so I added 2 large cloves, but you can adjust to taste. It’s best to make this a few hours up front, so the garlic can really mix with the yogurt
For the vegetable fries, I used yellow and orange carrots and parsnips which I cut into ‘fries’ and cooked them for about 5 minutes so they woudn’t take that long in the oven. After they have cooked a bit dry them with some paper towels (really, this is where I went wrong). Cover with oil and the spices and mix with the beans. Put this in a 200 degree oven for about 25 minutes. After about 15 minutes, add the tomatoes which have been cut into slices.
Since I only have a small oven and I wanted something crunchy to go with the fries. I cut the corn tortilla’s (about 1,5) each into quarters and put them in a hot pan which you oil a bit (I used oil and a brush) and bake them until they start to brown and get crispy. Put the tray on the table and serve with the yogurt sauce, tortilla’s and the optional feta cheese (for non-vegans) and hot sauce. Load up a bit of the fries, add some tortilla’s and drizzle some of the sauces on top.
