Bleh… I think my Macbook is starting to die on me. Good thing that the ‘Premium Reseller’ has a deal that allows me to turn in my old laptop, and get a discount on the purchase of a new one. I wasn’t really planning on getting a new one this soon because of the planned move. But if we find something fast I will borrow my ‘share’ of the costs and pay back the Mr. Yes, I’m one of those girls who want to pay her share 50/50 😛

Anyhow, talking of doing my share.. Cooking is my task so I’m sharing this recipe with you guys instead of trying to bore you with my Laptop-complains


What do you need (2 servings)

  • 120-130 grams of red lentils (dried)
  • 250 gr. of cherry tomatoes
  • 200 gr. of sugar snaps
  • 200 gr. of carrots
  • 1 clove of garlic
  • 1 tablespoon of curry madras powder
  • coriander to taste
  • rice

Heat some oil in a pan and add  the garlic, fry for about 30 seconds. Add the lentils and curry powder, stir for about a minute and pour in about 500-600 ml of water. Leave to simmer for about 20 minutes on low heat until the lentils start falling apart and a nice little sauce appears. While that is cooking boil rice according to the directions on the package and cut the carrots into 1 cm thick slices and the cherry tomatoes into halves. Add the carrots and the sugar snaps (I used frozen ones) and leave that to simmer for another 10 minutes, add a little water if needed. Serve the curry in a bowl, add some rice and sprinkle on some coriander if you want.
