A few weeks ago I made a number of dishes with the ingredients for this meal, but had some left over. But since I didn’t have reenactment training that week and I needed an ‘cocoon’-night because the Mr and me would visit the Winter Efteling the day after. (My ADHD-brain hates those days). So instead of cooking up something new and fancy I decided to trow a few left overs together and fix a meal for myself. This also works great as a lunch if you adjust the amounts a little.
Since I was going to be home late I went for a extra lazy approach for my rice and bought some rice you can heat in the microwave. So this meal was on the table in less then 10 minutes (a new record I guess). So, a healthy meal that’s done faster then your average pizza 😛
What do you need (1 serving)
- microwave rice (I used half a packet)
- 100 gr. of carrots
- 1 red onion
- 100 gr. suger snaps
- tofu chunks
- 2 tablespoons of soy sauce
- 1 tablespoon of liquid smoke
- 1 tablespoon of black bean sauce
Put the tofu pieces and the liquid smoke in a container with a lit and give it a toss. Cut the carrots and the onion into pieces and set a side. Put some oil in a wok and fry to tofu until crispy. Add the veggies and fry for a few minutes. Put the rice in the microwave and add that to the veggies. When that’s done, add the soy sauce.
Transfer onto a bowl and top of with a spoonful of black bean sauce. Enjoy your laze friday night!!
