Because one of our major clients is a school things around Christmas and New Years eve are always slow. That means I got to work on a few major things that take time to set up and if you get distracted you lose the momentum so to say. But, this slow period also means I have to motivate myself to keep working instead of having an external motivation to work. That takes a lot of energy so I knew I would be tired in the evenings. So, I made this pan of chunky pasta sauce. I call it chunky because of the huge amount of veggies combined with the lentil. It made a very filling pasta sauce. If you add a decent amount of pasta I think you have 3-4 portions.

So I hope you’ll enjoy this just as much as I did.


What do you need (3-4 servings)

  • 100 grams of lentils (I used a mixture of red and half green)
  • 400 gr. of veggies of choice (carrot, red onion, leek, zucchini, red bell pepper)
  • 1 400 gr. can of tomatoes
  • 1 70 gr. can of tomato puree
  • 2 large cloves of garlic
  • basil, oregano, pepper, salt, parsley.
  • half a cup of water

Cut the garlic into pieces and fry with some oil until it’s soft, add the lentils and the water and let them simmer for about 5 minutes. After that, add the veggies, tomatoes and the spices and bring to a boil, turn down after that. Leave to simmer until the lentils are soft and just start to fall apart.

While that is cooking up nicely cook the pasta according to the directions on the package. Drain the pasta and leave to rest for a bit. Add the tomato paste to the rest of the sauce and give a good stir. Divide the pasta among the plates and add the sauce, sprinkle some Nutritional Yeast and fresh basil on top and enjoy!!
