So, as I wrote in my post about cleaning out the pantry I promised some of the meals I made with the stuff I had left. With every meal, I wrote down what I used from my pantry. If you can’t really tell from the recipe-title or my directions I’ve put the store-bought ingredients up as well. Some of the meals I made are being put up as normal recipes. But you can find these using the tag “No waste project”.

I actually really enjoyed making these recipes, because they forced me to think creative and come up with things I never tried before.

Pappardelle with tomato-sauce and spinach

Pappardelle with tomato-sauce and spinach

From the pantry:

  • Dried Lasagna sheets
  • Red onion
  • Garlic
  • Can of tomatoes
  • Soy chunks

Boiled the lasagna sheets for about 10 minutes until cooked, add oil to prevent the sheets from sticking together. While that is cooking, make a simple sauce from the soy chunks, garlic, onion and the can of tomatoes. Add spices like dried basil for flavour. Roughly chop up the spinach and shrink in a pan. When the lasagna sheets are done, drain and cut into strips. Serve with the sauce and the spinach.

Pasta with kale, soy chunks and mushrooms

From the pantry:

  • Orecchiette pasta
  • soy chunks
  • small can of tomato pasta (70 ml)

Cooked pasta according to directions on the package and prepare the soy chunks (mine need boiling for 20 minutes on low heat).  Boil the kale for 5 minutes. Cut garlic and onion and fry in some oil, add mushrooms and kale. Mix the tomato paste with some water and add basil, salt, pepper, paprika powder, oregano and parsley. Mix everything together.

From the pantry

  • 1 jar of Mexican Bean Dish
  • Rice mixture (rice, quinoa, adamant, lupine)
  • Can of tomatoes

With this dish I actually managed to use two of the things from the pantry I wanted to use. Since turns out there wasn’t a lot of veggies in it and I didn’t have the time to get some extra veggies I added a can of tomatoes and some cucumber. With some vegan cheese and Sri­ra­cha I think I made a decent meal for myself. This was also perfect since I made this during my ‘late shift’-week and one of these nights I didn’t get home before 20:00….
