Jackfruit! I cooked with this before and I had another can of the stuff sitting around. In the spirit of my no waste project: cleaning out the pantry I used this can to make a sweet curry.

What do you need (2 servings)

  • 1 can of jackfruit (drained)
  • 2 tomatoes
  • 300 ml of coconut milk
  • 1 large red onion
  • 1 clove of garlic
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon of garam masala
  • 1/2 teaspoon of mustard seeds
  • 400 gr. of green beans
  • Noodles (I used rice)
  1. Start by cutting the Jackfruit in strips and cook the beans (I steamed them). Cook noodles according to the directions on the package. Cut the tomatoes into chunks.
  2. Cut the onion into pieces and crush the garlic.
  3. Put the garlic, onion and the spices in a frying pan with some oil. Add a little splash of water.
  4. Add the jackfruit and fry until soft and tender.
  5. Add the coconut milk, tomatoes and the beans and leave to simmer for a few minutes. The tomatoes should get soft.
  6. Put the noodles in a bowl and cover with the curry.
